No aspect of self-sufficiency has quite as many advantages as making your own wine. The cost savings are considerable, for a very modest outlay you can have a full drinks cabinet, enjoy wines every day, and keep alive a draditional country craft whose origins are lost in the mists fo time.
Many would be winemakers have been put off the hobby by tasting wines that were far from enjoyable, whilst others have stopped when their initial efforts were little better. Such wines are the result of bad technique it is important fo follow a few simple rules, the most important of which is hygiene throughout, or of poor recipes. Unless you use the correct ingredients in the right amounts you will never make a balanced wine.
